Samoa Goodness

Um hello.  Brownie.  Carmel.  Toasted coconut.  Chocolate.  I found these awesome samoa brownies at Six Sister's blog earlier this week and haven't stopped dreaming about them since.  Whipped them up last night, super easy, and they are prolly as good as I imagined. 

1 brownie mix
3 1/2 cups shredded coconut, toasted
(2) 14 oz. package of caramels, unwrapped
1/2 tsp. salt
4 tbsp. milk
3 oz. semi-sweet chocolate + a little shortening to soften

Prepare brownie mix according to box directions for a 9x13 pan and cool.

Preheat oven to 400 degrees and place coconut on baking pan. Cook until toasted, stirring every 2-3, took me about 10-12 minutes. Watch close so it doesn't burn.

In a large, microwaveable bowl, add unwrapped caramels, salt, and milk and cook on high for 3-5 minutes, stirring every 45 seconds.  Cook until all caramels are melted and smooth.

Add coconut to caramel and mix together. Spread over cooled brownies. Refrigerate 4-5 hours or overnight. Remove at least 1 hour from the fridge before cutting. Cut into bars and drizzle with melted semi-sweet chocolate (Melt chocolate chips with a little shortening so when it hardens it's a soft chocolate). Let chocolate set and enjoy.

I will totally have to try these they sound fabulous but first will have to invite someone over to eat some or I will eat them all which would taste so good, but butt- 'nough said. I am glad you are posting- good luck with the boy!
